Vanilla Peach Overnight Oats

Overnight oats are one of the simplest make-ahead breakfasts. No cooking is required and you can make one serving, or several, in about the same amount of time. So, why not prep a few jars at once and have breakfast in the bag for the whole week?

For this sweet and simple Vanilla Peach Overnight Oats recipe, simply fill a pint-sized Mason jar (or small bowl) with old-fashioned rolled oats, Vanilla Shakeology, water, a touch of vanilla extract for even more vanilla flavor, and slices of fresh (or frozen) peach. Seal the jar and place it in the fridge overnight. In the morning, the oats will be soft and ready to eat. We like our overnight oats straight out of the fridge, but they can also be heated in a microwave.

This recipe uses old-fashioned rolled oats because they keep their shape nicely and get soft but not mushy. They also give this breakfast a hefty serving of fiber, which keeps your digestive tract in business and helps you feel fuller longer.

You can vary the flavor by using different fruits and flavors of Shakeology, or by adding spices like cinnamon and ginger. Swap out the vanilla extract for other natural extracts like coconut or almond.

Want to make your morning a little more decadent? Add a couple of teaspoons of peanut or almond butter!

Ingredients:

  • ½ cup dry old fashioned rolled oats
  • 1 scoop Vanilla Shakeology
  • ⅔ cup water
  • ½ tsp. pure vanilla extract
  • 1 medium peach, chopped

Instructions

Here are your instructions:

  1. Combine oats and Shakeology in a medium bowl; mix well.

  2. Add water and extract; mix well. Soak, covered, in the refrigerator overnight.

  3. In the morning, top with peach; serve immediately.
