Spicy Crunchy Chickpeas
Spicy and crunchy and healthy, it’s a trifecta of delicious snacks!! Just toss them with a little olive oil and some spices, then roast in the oven until crunchy. They’ll stay crispy for a few days stored in glass container or storage bag at room temperature.
I personally use all organic ingredients when making this dish.
- 2 15 oz. can chickpeas (aka garbonzo beans), drained and rinsed.
- 2 Tbsp. extra-virgin olive oil or avocado oil
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1/2 tsp. cayenne pepper
- 1 tsp. smoked paprika, or to taste
- 1/2 tsp. himalayan salt, or to taste
Preheat oven to 400 degrees F (200 degrees C).
Pour chickpeas into a baking dish; drizzle olive oil over the top and season with cumin, paprika, cayenne pepper, and salt. Stir to coat chickpeas.
Bake in the preheated oven, stirring every 20 minutes, until crispy and fragrant, about 45-60 minutes. Transfer to a wire rack to cool completely.
