Avocado is one of nature’s most perfect foods. It contains healthy fat, vitamins and lots of fiber. It’s an ideal food to add to just about anything during keto to help you meet your fat macros. Plus, it’s delicious, creamy and versatile. This version of guacamole uses MCT oil for an added fat-boost. You can substitute olive oil if you prefer. The recipe says 4 servings, presuming you are just using a couple tablespoons. If you want, however, divide it into two servings.
- 1 medium avocado
- 3 tablespoons chopped cilantro
- 1 green onion, chopped
- 1 tablespoon MCT oil
- 1 tablespoon lime juice
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- Sea salt and pepper, to taste
Mash the avocado in a small bowl. Add remaining ingredients and stir well to combine.
If you need more fat, add a dollop of this to just about anything!
