Cauliflower Smoked Turkey Hash Brown Waffles

Ingredients

  • 1 head cauliflower, riced*
  • 3 eggs
  • 3 oz organic deli-sliced smoked turkey (about 4 slices)
  • 2 Tbsp nutritional yeast
  • 1 green onion, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • Pinch black pepper

  1. Preheat oven to 400°F. Lay riced cauliflower on a baking sheet and bake for 12 minutes. Remove to cool slightly.

  2. Add to a tea towel and squeeze out all liquid.

  3. Add the dried cauliflower and remaining ingredients to a medium bowl and stir to combine.

  4. Heat up a waffle iron. Coat with cooking spray. Spoon ½ of the mixture into the waffle iron and cook for about 5 minutes. Repeat with remaining batter.

  5. *To rice cauliflower, simply add florets to a food processor and pulse until it resembles rice, or use a cheese grater. If you can buy frozen riced cauliflower, you can skip step one and go right to step two. Just thaw the cauliflower and squeeze.

  6. To make this recipe into a fat-burning meal, add 1 tablespoon of olive oil to the batter and/or ¼ cup cheddar cheese. Top each waffle with ½ of a small avocado. This will increase the fat by 14-20 grams.
